Paleo Cinnamon Doughnuts

Treat yourself to these tasty paleo cinnamon doughnuts for breakfast! Incorporating cinnamon into any recipe is a great way to add flavor as well as a number of antioxidants to the dish. Coconut flour and almond flour are great alternatives to refined flours and are naturally gluten-free! Applesauce is known to lower cholesterol, aid in weight loss, and promote bowel regularity. Incorporating maple syrup into this recipe will add additional vitamins, minerals, and antioxidants. Using coconut sugar and coconut oil for the cinnamon sugar topping really brings out the flavor of this treat. Warm them up and enjoy with your favorite morning beverage!

Ingredients:

Serves 6

  • 1/3 cup coconut four

  • 3/4 cup almond flour

  • 2 large eggs

  • 1/3 cup applesauce

  • 1 ½ tbsp maple syrup

  • 1/2 tsp vanilla paste

  • 1/2 tsp baking soda

  • 3 tsp ground cinnamon

  • 1/3 cup coconut sugar

  • 2 tbsp coconut oil

  • 1/4 tsp salt

Instructions:

1) Preheat oven to 350 F and grease doughnut pan with coconut oil.

2) Combine coconut flour, almond flour, baking soda, 2 tsp of ground cinnamon, and salt in bowl.

3) In a separate bowl, combine applesauce, eggs, vanilla paste, and maple syrup.

4) Add wet ingredients to dry ingredients until well combined.

5) Pour batter into doughnut pan and bake for 15-18 minutes.

6) Once ready, remove from oven and set aside to cool.

7) Prepare cinnamon sugar topping by mixing together the coconut sugar and 1 tsp ground cinnamon. When doughnuts have completely cooled, brush each one with melted coconut oil and dip face down into cinnamon sugar mixture.

8) Store in airtight container and enjoy!

Start your day off with these protein-packed paleo patties! Sweet potatoes are a versatile ingredient that can be prepared in a number of ways. They are rich in vitamins, nutrients, and help with detoxifying the body. Adding in ground chicken will provide you with a source of protein for the day and help control your blood pressure. Spinach is known to help aid in strengthening muscles, preventing macular degeneration, and is beneficial for good eyesight! The addition of apple balances out the flavor of the recipe while also helping with digestion in the body. Using coconut flour is a great alternative for wheat flour as it is gluten-free and hypoallergenic. Serve with your favorite sauces and enjoy!

Ingredients:

Serves 4

  • 1 cup sweet potato, grated

  • 1 lb ground chicken

  • ½ cup spinach, chopped

  • ½ cup apple, diced

  • 2 tbsp of coconut oil

  • 2 tbsp of coconut flour

  • ½ tsp of sea salt

  • 1 tsp of rosemary

Instructions:

1) Preheat oven to 400 F and line baking sheet with parchment paper.

2) Combine all ingredients into a large bowl.

3) Make one-inch small poppers from the mixture and flatten them slightly on a baking sheet.

4) Bake in oven for 15 minutes, flip, and bake for another 10-15 minutes.

5) Allow to cool and serve. Enjoy!

Chocolate Quinoa Bowl

This chocolate quinoa bowl will be sure to satisfy your sweet tooth in the mornings! Quinoa is a superfood that contains plenty of vitamins, minerals, protein, and fiber. It’s a great source of magnesium, is weight-loss friendly, and contains all nine essential amino acids. Coconut milk is an anti-bacterial, anti-fungal, and anti-viral ingredient. It helps maintain blood sugar levels, prevent anemia, and keep the immune system healthy. The tasty addition of cocoa powder will help stabilize cholesterol and provide a number of antioxidants. Maple syrup is rich in vitamins and minerals and is a healthier replacement for refined sugar. Top it off with chocolate chips, hazelnuts, pecans, and shredded coconut. Enjoy!

Ingredients:

Serves 2

  • 1 cup cooked quinoa

  • ¼ cup coconut milk, canned

  • 2 tbsp cocoa powder, unsweetened

  • 1 tbsp maple syrup

  • ½ cup semi-sweet chocolate chips

  • ¼ cup hazelnuts

  • ¼ cup pecans

  • ¼ cup shredded coconut

Directions:

1) Divide cooked quinoa into two bowls.

2) Mix in coconut milk, cocoa powder, and maple syrup.

3) Top with chocolate chips, pecans, hazelnuts, and shredded coconut. Enjoy!

Egg and Veggie Casserole

This egg and veggie casserole is the perfect protein-packed meal to enjoy for breakfast! Eggs are known to help raise HDL cholesterol and promote weight loss, brain health, as well as hair and nail growth. The addition of bacon will provide a great source of protein, thiamin, zinc, and selenium which are essential for immune health. Sweet potatoes are rich in Vitamin B6, potassium, and beta-carotene. Onions help improve digestion, immunity, and reduce inflammation. Add in garlic powder, nutritional yeast, salt and pepper to enhance this flavorful dish and enjoy!

Ingredients:

Serves 10

  • 12 eggs

  • 12 pieces of nitrate-free bacon

  • 2 sweet potatoes, peeled and sliced

  • 2 cups of broccoli, chopped

  • 1 onion, diced

  • 1/3 cup of full fat coconut milk

  • 1 tbsp of coconut oil

  • 1/2 tsp garlic powder

  • 1/3 cup nutritional yeast (non-fortified)

  • 1 tsp of sea salt

  • 1 tsp of pepper

Instructions:

1) Preheat oven to 425 F and grease 9 x 13 dish with coconut oil.

2) Cut bacon into 1-inch pieces and cook in pan or skillet. Stir occasionally until all pieces are evenly crisp.

3) Toss sweet potatoes and broccoli in 1 tbsp of melted coconut oil and salt.

4) Place sweet potatoes on bottom of casserole dish and place broccoli on another pan lined with a baking sheet. Place both dishes in the oven to roast; broccoli should be in the oven for 20 minutes, and sweet potatoes should be in the oven for around 30 minutes.

5) Next, caramelize the onions by heating the pan you cooked the bacon in over medium heat and add in the onions with a dash of salt. Stir occasionally until caramelized. Remove from heat once done.

6) Next, whisk eggs and combine with coconut milk, nutritional yeast, salt, and pepper.

7) Lower oven heat to 400 F and begin to layer the casserole. Layer broccoli over sweet potatoes in casserole dish. Next, layer caramelized onions over the broccoli. Then, layer the bacon on top. Lastly, pour the egg mixture over the casserole.

8) Bake in oven for 25-28 minutes.

9) Allow to cool before serving and enjoy!
