Chocolate Quinoa Bowl

This chocolate quinoa bowl will be sure to satisfy your sweet tooth in the mornings! Quinoa is a superfood that contains plenty of vitamins, minerals, protein, and fiber. It’s a great source of magnesium, is weight-loss friendly, and contains all nine essential amino acids. Coconut milk is an anti-bacterial, anti-fungal, and anti-viral ingredient. It helps maintain blood sugar levels, prevent anemia, and keep the immune system healthy. The tasty addition of cocoa powder will help stabilize cholesterol and provide a number of antioxidants. Maple syrup is rich in vitamins and minerals and is a healthier replacement for refined sugar. Top it off with chocolate chips, hazelnuts, pecans, and shredded coconut. Enjoy!

Ingredients:

Serves 2

  • 1 cup cooked quinoa

  • ¼ cup coconut milk, canned

  • 2 tbsp cocoa powder, unsweetened

  • 1 tbsp maple syrup

  • ½ cup semi-sweet chocolate chips

  • ¼ cup hazelnuts

  • ¼ cup pecans

  • ¼ cup shredded coconut

Directions:

1) Divide cooked quinoa into two bowls.

2) Mix in coconut milk, cocoa powder, and maple syrup.

3) Top with chocolate chips, pecans, hazelnuts, and shredded coconut. Enjoy!

Homemade Healthy Chocolate

Making your own healthy chocolate is one of the best ways to avoid refined sugar and processed fats found in most store-bought dessert items! Cocoa powder helps in maintaining a healthy circulatory system, improves brain health, and lowers high blood pressure. It’s also high in antioxidants, promotes an alkaline pH, and is a good source of magnesium. Shredded coconut is rich in nutrients, fiber, vitamins, and minerals. It is known to boost energy levels, improve thyroid function, and reduce the risk of developing diabetes by improving insulin and blood glucose functions. Adding in maple syrup will sweeten the recipe as well as provide you with vitamins, minerals, and amino acids. Enjoy!

Ingredients:

Serves 6

  • ⅓ cup coconut oil, melted

  • 1 cup cocoa powder

  • ¼ tbsp maple syrup

  • 4 tbsp shredded coconut, unsweetened

Instructions:

1) Melt coconut oil, and whisk in maple syrup and cocoa powder until well combined.

2) Stir in shredded coconut until evenly distributed.

3) Pour into 12 ice cube tray and freeze.

4) Store in fridge or freezer to avoid melting. Serve & enjoy!

Coconut Milk Yogurt

Coconut milk yogurt is the perfect treat to enjoy for breakfast or dessert! Opting for a dairy-free option will help relieve digestive issues without eliminating the thickness and creaminess of normal yogurt. Coconuts are known to contain a high amount of manganese, copper, and iron, which are essential for the metabolism of proteins and carbohydrates as well as the formation of red blood cells. They also aid in weight loss, improve digestion, lower blood pressure, and boost cardiovascular health. If desired, add in maple syrup for sweetness and enjoy!

Ingredients:

Serves 6

  • 2 cups full-fat coconut milk, canned

  • 2 probiotic capsules

Instructions:

1) Gently blend coconut milk with contents of probiotic capsules until well combined.

2) Place in cool sanitized glass jar and cover with a cheesecloth.

3) Store in a warm place for 1-2 days. Test for thickness. If you want it thicker, try keeping it warm for another day.

4) Place in fridge and/or serve. Enjoy!

Fresh Berries with Cream

Berries with cream is a fresh and sweet dessert to serve and enjoy after a full meal! Strawberries boost immunity, aid in digestion, and regulate blood pressure. They also contain folate, antioxidants, and plenty of minerals! Blueberries are known to help protect heart health, manage levels of cholesterol, and improve brain function and memory. They are also rich in fiber, Vitamin C and K, and manganese. Coconut milk lowers blood pressure and cholesterol as well as relieves constipation. Add in some vanilla extract and maple syrup for additional flavor and enjoy!

Ingredients:

Serves 4

  • 2 cups blueberries

  • 2 cups strawberries

  • 1 cup full-fat coconut milk, refrigerated overnight

  • 1 tsp vanilla extract

  • 1 tbsp maple syrup

Instructions:

1) Place large mixing bowl in freezer for 30 minutes to chill before making coconut cream.

2) Turn cold can of coconut milk over and open from the bottom (so the liquid is on top). Save or discard coconut water.

3) Scoop the solid coconut cream at the bottom of the can into your chilled bowl, add vanilla and whip until fluffy.

4) Place berries in 4 bowls and top with whipped coconut cream and maple syrup. Enjoy!
