Mediterranean Cauliflower Rice

This Mediterranean cauliflower rice is paleo-friendly, gluten-free, and full of flavor! Cauliflower is known to be rich in antioxidants, aids in digestion, and supports healthy weight management. It also supports heart health, contains anti-inflammatory properties, and is full of Vitamin C. Olive oil helps prevent inflammation throughout the body, lowers cholesterol levels, and improves brain function! Garlic helps regulate blood pressure, strengthens the immune system, and improves bone health. Season with lime juice and sea salt and enjoy!

Ingredients:

  • 1 medium head cauliflower

  • 2 tbsp extra virgin olive oil

  • 2 cloves garlic, minced

  • ½ cup parsley, chopped

  • 1 tbsp lime juice

  • ¼ tsp sea salt

Instructions:

1) Cut head of cauliflower into medium-sized chunks, discarding the core. Pulse chunks of cauliflower in a food processor until they are broken into tiny pieces.

2) Using a paper towel, wrap the cauliflower, twist, and squeeze out as much water as possible.

3) Heat a skillet over medium heat with olive oil and minced garlic. Cook for around 30 seconds until garlic is fragrant. Add in cauliflower rice and sea salt and mix well to combine.

4) Continue to cook rice until it begins to look golden (around 7-10 minutes).

5) Remove skillet from heat and stir in parsley, lime juice, and sea salt. Enjoy!
