Breakfast Burritos

Make these flavorful and paleo-friendly breakfast burritos for your next breakfast! Ingredients:

  • 6 whole eggs

  • 4-6 paleo-friendly wraps

  • ½ lb grass-fed beef, pre-cooked

  • 1 tomato, diced

  • 1 avocado, diced

  • ¼ cup paleo-friendly cheese, shredded

  • 1 tsp sea salt

  • 1 tsp black pepper

  • 2 tsp coconut oil

  • Optional guacamole and salsa to serve on the side

Instructions:

1) Coat large pan with 2 tsp coconut oil and heat over medium.

2) In a bowl, whisk eggs and seasonings together. Add to pan and cook over medium heat, stirring every so often until eggs are scrambled.

3) Once eggs are fully cooked, transfer to the center of each paleo wrap.

4) Begin to add in pre-cooked beef, tomato, avocado, paleo-friendly cheese, and salsa if desired.

5) Roll each wrap like a burrito and enjoy!

Paleo Breakfast Skillet

Make this hearty and delicious paleo breakfast skillet as your next breakfast option! Eggs provide an excellent amount of choline, which is essential for healthy brain function and development. Bell peppers are a great source of fiber, are rich in Vitamin C, and reduce cholesterol levels. Tomatoes boost immunity, reduce the risk of heart disease, and prevent macular degeneration. Adding in potatoes to this dish will provide a good amount of Vitamin A, copper, and manganese. Top with your favorite spices and/or sauce and enjoy!

Ingredients:

  • 5-6 eggs

  • 2 bell peppers, diced

  • 1 tomato, diced

  • 3.5 cups golden potatoes, diced

  • 3 tbsp coconut oil

  • ¾ cup white onion, diced

  • 1 tsp garlic powder

  • ½ tsp sea salt

  • ½ tsp black pepper

Instructions:

1) Preheat the oven to 350F.

2) Heat large skillet on medium-high heat and melt coconut oil.

3) Once oil is completely melted, add in potatoes, garlic powder, sea salt, and black pepper and cook for 5-7 minutes.

4) When potatoes begin to soften, add in diced onion, tomato, and bell pepper and cook for 7-10 minutes until potatoes start to brown.

5) Begin to add eggs to the skillet and stir until fully scrambled and all ingredients are fully incorporated. Top with any additional spice or sauce and enjoy!

Ingredients:

  • ¾ cup almond meal

  • ¾ cup desiccated coconut (unsweetened)

  • ½ cup cashews, raw and soaked overnight

  • ¼ cup lemon juice

  • 2 tbsp organic coconut milk

  • 2 tbsp coconut oil, melted

  • 2.5 tbsp raw honey

  • Zest of 2 lemons

  • ¼ cup desiccated coconut (unsweetened), for coating

Instructions:

1) Combine all ingredients in a blender or food processor until fully combined and formed like a dough.

2) Roll into small-medium sized balls then coat with ¼ cup of desiccated coconut.

3) Store in the fridge in an airtight container for up to 5-6 days. Enjoy!

Ingredients:

  • 6 eggs, organic and pasture raised

  • 16 oz beef, grass-fed

  • 1 yellow and 1 red bell pepper, sliced

  • Grain free tortillas

  • 1 avocado, sliced

  • Cilantro, chopped

  • 1 lime

  • 2 tsp coconut oil

  • 1 tsp sea salt

  • 1 tsp black pepper

Instructions:

1) In a pan, heat 1 tsp of coconut oil and add sliced peppers. Cook until translucent.

2) Add grass-fed beef to pan and cook until fully cooked - no red visible.

3) Whisk eggs in a large bowl and add into another pan greased with the remaining 1 tsp of coconut oil. Continuously stir with spatula until eggs are done to your liking. Season with salt and pepper.

4) Warm up tortillas and assemble tacos with all cooked ingredients as well as sliced avocado and cilantro. Squeeze lime juice over the top and enjoy!
