Paleo Samoa Bars

These gluten-free, dairy-free, and paleo friendly Samoa bars will be sure to satisfy your sweet tooth! Coconuts are known to be rich in fiber, increase energy levels, improve levels of good cholesterol, and help with weight loss. Substituting almond flour for traditional wheat flour in this dessert is a great alternative, as it is gluten-free and low in carbohydrates. Almond butter is rich in fiber, calcium, and magnesium. Using maple syrup as a sweetener provides antioxidants, minerals, and vitamins to this sweet treat. Drizzle on some dark chocolate and toasted coconut and enjoy!

Ingredients:

Yields 16 bars

  • 1 cup almond flour

  • 2 ¼ cup coconut, shredded

  • 1 cup toasted coconut, shredded (for topping)

  • ½ cup almond butter

  • ⅔ cup maple syrup

  • ¾ cup coconut oil

  • 3 oz dark chocolate

Instructions:

1) Line a 9 x 5 baking dish with parchment paper.

2) Combine 1 cup coconut (non-toasted), almond flour, 3 tbsp maple syrup, and ⅓ cup of melted coconut oil in a bowl to create the crust.

3) Place well-combined crust into pan and place in freezer for 10-15 minutes.

4) Combine almond butter, 3 tbsp of coconut oil, and the remaining amount of maple syrup and coconut (non-toasted) to create caramel layer. Remove dish from freezer and pour caramel on top. Place dish back into the freezer for another 10-15 minutes.

5) Combine the dark chocolate and remaining coconut oil in a small stove pot and warm until fully melted.

6) Remove dish from freezer and drizzle chocolate over the top. Sprinkle on toasted coconut. Place dish back into the freezer for 5-10 minutes.

7) Once hardened, remove dish from freezer, slice into 16 squares, and enjoy!

Enjoy this easy and savory paleo snack mix on the go! Cashews are known to improve heart function and provide an excellent source of magnesium for brain and bone health. Another popular nut used in this recipe, almond, is known to increase good cholesterol, is rich in Vitamin E, and is full of a number of minerals. Pecans improve cardiovascular health, control diabetes, and help regulate blood pressure. Lastly, pistachios are loaded with nutrients, high in protein, great for skin health, and rich in antioxidants. Add in some sea salt, paprika, and any other spices. Enjoy!

Ingredients:

Serves 12

  • 1 cup cashews

  • 1 cup almonds

  • 1 cup pecans

  • 1 cup pistachios

  • 1 tbsp of coconut oil

  • 1 tsp of sea salt

  • 1 tsp of paprika

 Instructions:

1) Preheat oven to 325 F and line a baking sheet with parchment paper.

2) Mix all nuts and coconut oil in bowl and then slowly add in spices and salt until combined well.

3) Next, spread nuts on the baking sheet and bake for 18-20 minutes or until golden brown.

4) Let cool and enjoy!

Blueberry Lemon Loaf

Enjoy this sweet and zesty blueberry lemon loaf as a filling treat! Blueberries are known to reduce inflammation in the body, support skin health, and support urinary tract health. They are full of essential nutrients such as Vitamin C, Vitamin K, and manganese. Lemons help with digestion, balance pH levels throughout the body, and aid the body in detoxification. Coconut flour and almond flour are great alternatives for regular flour, as they are both gluten-free and high in fiber. Adding in bananas and maple syrup as sweeteners are great alternatives to processed sugar! Both ingredients are full of vitamins and antioxidants, which are essential for a well-functioning body. Serve up a slice for breakfast or enjoy for dessert!

Ingredients:

Yields 12 slices

Bread

  • 3 tbsp of coconut flour

  • 2 cups of almond flour

  • 1 tsp of baking soda

  • 2 tbsp of almond milk

  • 3 eggs

  • ¼ cup of maple syrup

  • 2 bananas, mashed

  • 1 cup blueberries

  • 1/4 cup of melted coconut oil

  • Zest and juice of 1 lemon

 Glaze

  • 1/3 cup of coconut oil

  • 1 tsp maple syrup

  • Zest and juice of 1 lemon

 Instructions:

1) Preheat the oven to 350 F.

2) Line loaf pan with parchment paper.

3) Mix almond flour, coconut flour, and baking soda in bowl.

4) Mix all wet ingredients in separate bowl. Then, combine wet and dry ingredients. Gently fold in the blueberries.

5) Place in oven and bake for 40-50 minutes

6) While the loaf is in the oven, make the glaze by combining the coconut oil, maple syrup, lemon juice and zest. Place in fridge to thicken.

7) Once loaf is fully baked, remove from oven and let cool. When fully cool, drizzle glaze on top. Enjoy!

Baked Carrot Fries

Enjoy these baked carrot fries as a snack or side dish! Carrots are known to help boost your immune system, prevent heart disease, and reduce high blood pressure. They are loaded with Vitamin A and K as well as iron, copper, and magnesium! Tapioca flour is a great alternative for regular flour and is known to help aid in digestion, enhance energy levels, and maintain optimal blood pressure. Adding in salt, pepper, garlic powder, and thyme will make this snack more flavorful. Serve with your favorite sauces and enjoy!

Ingredients:

Serves 3

  •  10 medium sized carrots

  • 3 tbsp of tapioca flour

  • 1.5 tbsp of coconut oil (melted)

  • 2 tsp of sea salt

  • 1 tsp of pepper

  • 1 tsp of garlic powder

  • 1 tsp of thyme

Instructions:

1) Preheat oven to 450 F and place parchment paper on a baking sheet.

2) Wash, peel, and cut carrots into sticks that are 3 inches long and half an inch thick.

3) Mix carrots, coconut oil, tapioca flour, and spices into a bowl.

4) Spread carrots on baking sheet, making sure they are not stacked on one another.

5) Bake for 20-30 minutes and flip halfway through.

6) Once done, take them out and let cool. Enjoy!
