Mini Sweet Potato Muffins

Ingredients:

  • 1 large sweet potato, mashed

  • ½ banana, mashed

  • ½ cup almond butter

  • 2 eggs, whisked

  • 3 tbsp unsweetened applesauce

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1 ½ cups almond flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • ½ tsp sea salt

Instructions:

1) Preheat oven to 350 degrees F. Line a muffin pan with mini muffin liners.

2) In a large bowl, combine mashed sweet potato, mashed banana, almond butter, whisked eggs, applesauce, maple syrup, and vanilla extract. Mix all ingredients well until fully combined.

3) In a separate bowl, mix almond flour, baking soda, cinnamon, nutmeg, and sea salt. Add the dry mixture to the wet mixture and stir well.

4) Add the mixture to muffin liners, filling each cup about ¾ of the way full. This recipe will yield about 30 mini muffins.

5) Bake in the oven for about 15 minutes. Allow to cool before eating and enjoy!

  • 1 tsp black pepper

Instructions:

1) In a bowl, combine almond milk and lemon juice. Allow the mixture to sit for three minutes to thicken.

2) Combine garlic mayonnaise, parsley, and vinegar in a large bowl. Whisk ingredients together. Slowly add in milk and lemon juice mixture, mixing well until desired consistency is reached.

3) Mix in salt and pepper. Transfer dressing to a mason jar, refrigerate, and enjoy!

Serve this guacamole with tortilla chips and/or fresh veggies and enjoy!

Ingredients:

  • 3 large avocados, ripe

  • ½ cup red onion, finely chopped

  • ½ large tomato, diced

  • ⅓ cup cilantro, rinsed and finely chopped

  • 4 tbsp lime juice

  • 1 tsp pepper

  • ½ tsp sea salt

Instructions:

1) Scoop the flesh of the avocados into a large bowl and begin to mash, leaving some chunks.

2) Toss in the red onion, tomato, cilantro, and lime juice and mix altogether. Then, mix in the salt and pepper, and adjust to taste.

3) Serve immediately with tortilla chips and/or fresh veggies and enjoy!

Ingredients:

  • ⅓ cup water

  • ⅓ cup cocoa powder

  • Pinch of sea salt

  • 1 tbsp pure vanilla extract

  • ½ cup maple syrup

  • 1 cup dairy-free milk of choice (1 cup per serving)

Instructions:

1) Pour the water into a pan and bring to a boil on the stovetop.

2) Add the cocoa powder and salt to a heat-proof bowl and pour the boiled water on top. Mix until well combined and let sit for 3-5 minutes.

3) Add the vanilla extract and maple syrup to the mixture and stir well.

4) Warm the dairy-free milk on the stovetop. Transfer to a cup and add in 2 tbsp of chocolate syrup. Mix well and enjoy!
