Lemon Pound Cake

Try making this sweet and paleo-friendly lemon pound cake for dessert! Lemons are known to help balance pH levels in the body, aid in weight loss, and boost the immune system. Ingredients:

  • 3 eggs

  • 1 cup almond flour

  • ¼ cup coconut flour

  • 2 lemons, juiced

  • ⅓ cup coconut oil, melted

  • ⅓ cup maple syrup

  • 1.5 tsp baking powder

  • 1 pinch of sea salt

  • 2 lemons, zested

Instructions:

1) Line a bread pan with parchment paper and preheat oven to 350F.

2) Combine all wet ingredients in a mixing bowl, stir well.

3) Next, add in dry ingredients to the wet ingredients. Mix until thoroughly combined.

4) Pour batter into pan and smooth over the top.

5) Place in oven and bake for 50 minutes.

6) Before removing the pan to cool on a cooling rack, allow pound cake to cook for around 5-6 minutes in the pan.

7) Slice into 10-12 slices and serve. Enjoy!
