Mini Breakfast Quiches

Try adding these quick and filling breakfast quiches to your morning routine! Eggs help in the development of the brain and facilitate cell repair and growth throughout the body. Bell peppers help boost the immune system, are good for heart health, and help regulate blood pressure. Onions are known to prevent inflammation throughout the body, lower blood sugar levels, and improve digestion. Adding fresh herbs such as rosemary and thyme to this recipe will provide you with extra antioxidants. Enjoy!

Ingredients:

  • 10 eggs

  • 1 cup yellow bell pepper, diced

  • 1 cup onion, diced

  • ½ cup paleo-friendly cheese

  • 3 tbsp fresh herbs

  • Pinch of sea salt and pepper

Instructions:

1) Preheat the oven to 400F and grease 12 muffin cups with coconut oil.

2) Add in 2 tbsp of diced veggies to each cup, filling about ½ full.

3) Whisk together eggs, salt, and pepper in a mixing bowl.

4) Pour egg mixture over veggies in each cup until at least ¾ full.

5) Top each cup with paleo-friendly cheese.

6) Place in oven and bake for 18-20 minutes.

7) Allow to cool for 2-3 minutes in the pan before removing and placing quiches onto a platter. Top with fresh herbs and enjoy!
