Mandarin Orange Chicken Salad

Ingredients:

Salad:

  • 4 cups romaine lettuce, chopped

  • 2 10 oz cans organic mandarin oranges

  • 2 cups chicken, cooked and diced

  • ½ cup almonds, chopped

Dressing:

  • 2 tbsp coconut aminos

  • 2 tbsp apple cider vinegar

  • 2 tbsp remaining juice from canned mandarin oranges

  • 1 tbsp extra virgin olive oil

  • 2 tsp toasted sesame oil

  • ½ tsp ginger, minced

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • 1 clove garlic, minced

Instructions:

1) Drain the canned mandarin oranges but reserve 2 tbsp of juice for the dressing.

2) In a large salad bowl, combine the lettuce, organic mandarin oranges, chicken, and almonds.

3) In a separate smaller bowl, whisk together ingredients for the salad dressing.
