Raspberry Chia Pudding

Try making this sweet and easy raspberry chia pudding for your next breakfast or snack! Raspberries are high in fiber, an excellent source of Vitamin C, and can help manage blood sugar levels. Ingredients:

  • 2 cups unsweetened almond or coconut milk

  • ½ cup chia seeds

  • 1 pint raspberries

  • 2 tbsp maple syrup

  • Fresh berries and/or nut butter for topping, optional

Instructions:

1) Combine chia seeds and milk of choice in a jar and seal with lid. Shake the jar well and let sit overnight.

2) When ready to eat, combine the pint of raspberries and maple syrup into a saucepan. Heat mixture over medium heat until it boils, and then let simmer. Mash the berries well and cook for an additional 2-4 minutes.

3) Separate chia pudding into two separate glasses. Pour raspberry mixture over chia pudding. Top with extra fresh berries and/or nut butter and enjoy!

  • ¼ cup walnuts, chopped

  • ¼ cup unsweetened shredded coconut, chopped

  • 1 cup almond milk

  • ½ tbsp chia seeds

  • ½ tsp cinnamon

  • ½ tsp vanilla extract

  • ⅛ tsp sea salt

 Instructions:

1) Combine chopped nuts, coconut, flax meal, coconut flour, chia seeds, cinnamon, vanilla extract, and sea salt in a small bowl.

2) In a pan, heat almond milk until steaming. Then, pour over dry ingredients and stir until well combined.

3) Add sweetener to taste and add additional toppings as desired. Enjoy!

Ingredients:

  • 10 eggs

  • 1 cup yellow bell pepper, diced

  • 1 cup onion, diced

  • ½ cup paleo-friendly cheese

Instructions:

1) Preheat the oven to 400F and grease 12 muffin cups with coconut oil.

2) Add in 2 tbsp of diced veggies to each cup, filling about ½ full.

3) Whisk together eggs, salt, and pepper in a mixing bowl.

4) Pour egg mixture over veggies in each cup until at least ¾ full.

5) Top each cup with paleo-friendly cheese.

6) Place in oven and bake for 18-20 minutes.

7) Allow to cool for 2-3 minutes in the pan before removing and placing quiches onto a platter. Top with fresh herbs and enjoy!
