Ingredients:

  • ½ cup applesauce

  • ½ cup maple syrup

  • ⅓ cup creamy almond butter

  • 3 cups gluten-free oats

  • 2 tsp cinnamon

  • 1 tsp sea salt

  • ¼ cup raisins

Instructions:

1) Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

2) In a large bowl, combine the applesauce, maple syrup, and almond butter. Add in the oats, cinnamon, baking powder, and sea salt. Fold in the raisins.

3) Use a cookie scooper to scoop out ¼ of the dough and roll it with your hands to form mini balls onto the pan. Flatten the balls of dough with the palm of your hand. This recipe will yield about 12 small cookies.

4) Transfer the pan to the oven and bake for about 25 minutes or until the top of the cookies are golden. Remove the cookies from the oven and allow to cool for about 10 minutes before enjoying.

5) Store in an airtight container in the refrigerator for up to 2 weeks and enjoy!

4) Grease a 12-cup muffin baking dish with coconut oil. Fill the cups with the mixture and bake in the oven for 20 minutes or until muffins “bounce back” when touched.

5) Store these muffins on the counter for up to 4 days or in the refrigerator for up to 2 weeks and enjoy!

2) Evenly spread out the quinoa and oats on a baking sheet. Transfer to the oven for 10 minutes. Once the 10 minutes are up, add the quinoa and oats to a large bowl. Mix in the chia seeds.

3) In a saucepan, add the peanut butter, walnuts, maple syrup, vanilla extract, sea salt, and coconut oil. Heat over low-medium heat and continue to stir until creamy.

4) Once cooled, transfer the peanut butter mixture to the oat and quinoa mixture and combine well. Add the chocolate chips to the mixture.

5) Transfer the mixture to the lined baking pan. Chill in the refrigerator for up to 20 minutes.

6) Cut into 8 separate bars and enjoy!
