Coconut Macaroons

Try making these vegan and paleo-friendly coconut macaroons for dessert! Coconut is known to provide health benefits in the form of fiber and manganese. It also helps with stimulating immunity, improving digestion, and improving brain function as well! Almond flour is a great alternative to regular processed flour, as it is naturally gluten-free and high in fiber. It also has a significantly lower glycemic index than other types of flour. Adding in maple syrup to sweeten this recipe will be sure to provide you with a number of vitamins, minerals, and antioxidants. Enjoy!

Ingredients:

  • 1 ¼ cup unsweetened coconut, shredded

  • ¼ cup blanched almond flour

  • ¼ cup maple syrup

  • 3 tbsp coconut oil, solid

Instructions:

1) Preheat oven to 350F and line a baking sheet with parchment paper.

2) Combine shredded coconut, almond flour, maple syrup, and coconut oil into a food processor.

3) Blend ingredients until well-combined.

4) Scoop firmly packed balls of coconut mixture with small cookie scoop and place balls onto baking sheet.

5) Bake for around 12-15 minutes.

6) Let cool for 30 minutes and enjoy!

Chocolate Zucchini Muffins

Enjoy these tasty chocolate zucchini muffins for breakfast or dessert! Zucchini is known to be rich in Vitamin C, Vitamin B6, and Potassium. It also has a high fiber content, helps lower cholesterol, and enhances digestion. Almond flour is a great alternative to other types of flour for this recipe, as it has a significantly lower glycemic index. Cocoa is known to help maintain a healthy circulatory system, lowers high blood pressure, and improves brain health! Ingredients:

  • 2 cups almond flour

  • ¼ cup unsweetened cocoa powder

  • ¾ cup zucchini, shredded

  • 3 eggs

  • ½ tsp baking soda

  • ¼ tsp sea salt

  • ¼ cup pure maple syrup

  • ¼ cup coconut oil, melted

  • ½ cup paleo-friendly chocolate chips

Instructions:

1) Preheat oven to 350F.

2) Line cupcake pan with 12 liners or grease with coconut oil.

3) Combine almond flour, baking soda, cocoa powder, and salt in a mixing bowl.

4) Combine coconut oil, maple syrup, and eggs in a separate mixing bowl.

5) Add wet ingredients to dry ingredients. Mix until well-combined.

6) Add and stir in zucchini and chocolate chips.

7) Place batter into cupcake pan and bake for 20-22 minutes.

8) Remove from oven and let cool for 10 minutes. Enjoy!

Cinnamon Apples

Try this flavorful and paleo-friendly cinnamon apple recipe for breakfast or dessert! Apples are known to help treat anemia, help with digestion, and balance out blood sugar levels. They are also rich in Vitamin C, Vitamin A, and potassium! Cinnamon is cholesterol-free, sugar-free, and contains antibacterial properties. It’s full of antioxidants, lowers cholesterol levels, and contains manganese, fiber, and calcium. Using maple syrup is a great alternative for refined sugar in this recipe. It’s known to have antioxidant properties, boosts the immune system, and protects against cardiovascular disorders. Enjoy!

Ingredients:

  • 5 medium sized apples, peeled and sliced

  • 3 tbsp maple syrup

  • 2 tbsp coconut oil, melted

  • 1.5 tsp ground cinnamon

  • ¼ tsp sea salt

 Instructions:

1) Preheat oven to 375 F.

2) Place apples in mixing bowl and toss with maple syrup, coconut oil, cinnamon, and sea salt.

3) Line baking sheet with parchment paper and place a thin layer of apples onto baking sheet.

4) Bake in oven for 15 minutes.

5) After 15 minutes, take out baking sheet, stir the apples, and place back into the oven for another 7 minutes.

6) Once apples are tender, take them out of the oven and let them cool. Enjoy!

Paleo Buckeyes

These no-bake paleo buckeyes are packed with protein and sweetness! Almond butter is known to be rich in fiber, heart-healthy fats, calcium, and magnesium. It’s gluten-free, cholesterol-free, and low in sodium. Using maple syrup as a sweetener to this recipe will provide you with vitamins, minerals, and nutrients! Almond flour is high in fiber and has a significantly lower glycemic index than other types of processed flour. Dark chocolate is known to be high in antioxidants, rich in nutrients, and promotes healthy cardiovascular function. Enjoy!

Ingredients:

  • 1 ½ cups almond butter

  • ⅓ cup almond flour

  • ⅓ cup maple syrup

  • ¼ cup melted coconut oil

  • ½ tsp sea salt

  • 1 tsp pure vanilla extract

  • 1 cup dark chocolate chips

  • Small handful of chopped nuts (for topping)

 Instructions:

1) Combine almond butter, maple syrup, and coconut oil in a large bowl until smooth.

2) Incorporate the almond flour, vanilla, and salt into the mixture.

3) Place mixture in freezer for 30-45 minutes until firm.

4) Once firm, roll into 20-25 balls and place on parchment paper. Place in freezer for an additional 30 minutes.

5) Melt dark chocolate chips over stovetop until fully melted.

6) Remove balls from freezer and and dip/coat each in melted chocolate. Place back on baking sheet and sprinkle chopped nuts over each buckeye ball. Place in freezer again for 30 more minutes.

7) Once firm, serve and enjoy!
