Sweet Potato Breakfast Hash

This sweet potato breakfast hash is a great morning meal option that will keep you full and fueled! Sweet potatoes are a great source of beta carotene, low in sodium, and free of cholesterol! Chicken is known to be rich in B vitamins and is an excellent source of protein. Garlic is beneficial in digestion, helps with hypertension, and reduces high cholesterol levels. Spinach is packed with nutrients, high in antioxidants, and strengthens the immune system. If desired, add in an egg and chopped bacon for extra protein and enjoy!

Ingredients:

Serves 2

  • 1 tbsp coconut oil

  • 1 lb. organic chicken sausage (sliced into half inch circles)

  • 2 cups sweet potato, peeled & cubed

  • 1/4 cup red bell pepper (sliced)

  • 4 cups spinach

  • 2 cloves garlic, minced

  • 2 tsp dried parsley

  • 1 dash salt & pepper

  • 1 egg and 4 slices of chopped bacon (optional)

Instructions:

1) Heat 1 tbsp coconut oil in large skillet, add in sliced chicken sausage and cook until browned.

2) Add sweet potatoes, bell pepper, and minced garlic and stir.

3) Stir in salt, pepper, and parsley.

4) Cook until sweet potatoes are soft, about 10 minutes.

5) Add spinach and cook until wilted.

6) If desired, add in cooked bacon and one egg. Cook until desired consistency for egg is met.

7) Serve hot. Enjoy!

English Muffins

Enjoy these paleo English muffins for a hearty and filling breakfast! Arrowroot is known to help improve heart health, boost energy levels in the body, and aid in weight loss. Cassava supports healthy gut bacteria, helps fight inflammation, and helps maintain hair and skin health. It also supports healthy blood sugar levels as well as healthy weight management. Adding in unsweetened applesauce to this recipe is a great alternative to regular sugar. It is high in fiber, keeps you full longer, and is rich in antioxidants. Spread some paleo-friendly butter, jam, or peanut butter on these muffins and enjoy!

Ingredients:

Yields 4 Muffins

  • 1/2 cup arrowroot flour

  • 1/2 cup cassava flour

  • 1 tsp baking powder

  • ½ tsp sea salt

  • 2 eggs, whisked

  • 1 tbsp palm shortening, melted

  • 1/3 cup applesauce (unsweetened)

Instructions:

1) Preheat the oven to 350F and line a baking sheet with parchment paper.

2) Combine cassava, arrowroot, baking powder, and sea salt into a bowl.

3) Combine eggs, palm shortening, and applesauce in a separate bowl.

4) Mix together the dry and wet ingredients until well combined.

5) In English Muffin molds, grease the insides with coconut oil or palm shortening. Spoon the mix into all molds.

6) Bake for around 10-12 minutes. Flip the mold over and bake for 8-10 more minutes.

7) Once cool, cut into halves and enjoy!

Deviled Eggs

These deviled eggs are packed with protein and flavor! Eggs are known to be a great source of protein, are low in sodium, and rich in omega-3 fatty acids. They also contain iron, zinc, folate, and vitamins A, D, and E! For this recipe, it’s important to find the perfect, paleo-friendly mayonnaise that has a great consistency and is flavorful. Dijon mustard is rich in selenium, magnesium and copper. It also contains manganese and a number of antioxidants. Paprika regulates blood pressure and is a great source of vitamin C. Top each egg off with your favorite spices and enjoy!

Ingredients:

  • 12 eggs, hard boiled and peeled

  • ⅓ cup & 2 tbsp paleo mayonnaise

  • 1.5 tbsp Dijon mustard

  • ¼ tsp sea salt

  • ¼ tsp black pepper

  • 2 tsp paprika

 Instructions:

1) Cut each hard boiled/peeled egg in half lengthwise.

2) Scoop out egg yolks and place in mixing bowl.

3) Place egg white halves on a tray and set aside.

4) Combine yolks, paleo-friendly mayonnaise, mustard, salt, and pepper until smooth.

5) Scoop spoonful of mixture into each half egg and top with paprika. Enjoy!

Blueberry Lemon Loaf

Enjoy this sweet and zesty blueberry lemon loaf as a filling treat! Blueberries are known to reduce inflammation in the body, support skin health, and support urinary tract health. They are full of essential nutrients such as Vitamin C, Vitamin K, and manganese. Lemons help with digestion, balance pH levels throughout the body, and aid the body in detoxification. Coconut flour and almond flour are great alternatives for regular flour, as they are both gluten-free and high in fiber. Adding in bananas and maple syrup as sweeteners are great alternatives to processed sugar! Both ingredients are full of vitamins and antioxidants, which are essential for a well-functioning body. Serve up a slice for breakfast or enjoy for dessert!

Ingredients:

Yields 12 slices

Bread

  • 3 tbsp of coconut flour

  • 2 cups of almond flour

  • 1 tsp of baking soda

  • 2 tbsp of almond milk

  • 3 eggs

  • ¼ cup of maple syrup

  • 2 bananas, mashed

  • 1 cup blueberries

  • 1/4 cup of melted coconut oil

  • Zest and juice of 1 lemon

 Glaze

  • 1/3 cup of coconut oil

  • 1 tsp maple syrup

  • Zest and juice of 1 lemon

 Instructions:

1) Preheat the oven to 350 F.

2) Line loaf pan with parchment paper.

3) Mix almond flour, coconut flour, and baking soda in bowl.

4) Mix all wet ingredients in separate bowl. Then, combine wet and dry ingredients. Gently fold in the blueberries.

5) Place in oven and bake for 40-50 minutes

6) While the loaf is in the oven, make the glaze by combining the coconut oil, maple syrup, lemon juice and zest. Place in fridge to thicken.

7) Once loaf is fully baked, remove from oven and let cool. When fully cool, drizzle glaze on top. Enjoy!
